By now, you may have heard of the dangers of BPA (bisphenol A), an estrogen-like chemical found in cans and certain types of plastic that’s been linked to obesity, diabetes and heart disease. Forgo the canned stuff and opt instead for the fresh, juicy tomatoes that make this homemade pasta sauce so delicious.
Homemade Pasta Sauce
2 pounds fresh, ripe tomatoes (blanched, peeled and chopped)
3 tablespoons extra virgin olive oil
2 tablespoons butter
2 cloves garlic, minced
1/8 cup fresh basil, loosely chopped
1 medium onion, peeled chopped salt to taste
Place all ingredients (excluding the salt) in a large saucepan, and cook, uncovered, at a very slow but steady simmer for 45 minutes or until the fat floats free from the tomatoes. Stir occasionally, mashing any large pieces of tomato in the pan with the back of a wooden spoon. Taste and season with salt. Discard the onion before tossing the sauce with pasta.
